Use our classic sponge cake recipe as the base of any celebration cake!
While the soft fruits of summer are perfect for filling sponge cakes, something sharp, fragrant and acidic, such as passion fruit, contrasts with the richness of the cake and cream.
If you want to make this in an 18cm tin just use two eggs and 110g each of flour, sugar and butter.
