Creamy green skillet pork medallions

This easy creamy pork recipe is perfect when you want something special in a hurry. Golden pork medallions nestle in a rich, herby sauce. Use our fabulous, freeze-ahead easy green sauce to add plenty of flavour.

Try the base green sauce in our walnut and herby pesto pasta, too.
Ingredients
- 6 pork medallions
- 1 onion, sliced
- 100ml dry white wine
- 150g double cream
- 2 tbsp easy green sauce
Method
- Brown the pork medallions on both sides in a large frying pan (one with a lid) with a dash of vegetable oil, then set aside.
- Fry the sliced onion in the same pan until softened, then add the wine and simmer until reduced by half. Stir in the double cream and green sauce, then return the pork to the pan and simmer with the lid on for 5 minutes until cooked through. Serve with rice or crusty bread.
