Ingredients

  • 1 red onion
  • 1 red pepper
  • 1 courgette
  • Drizzle of olive oil
  • Drizzle of balsamic vinegar
  • 2 tsp harissa paste
  • 100ml yogurt
  • 4 crusty rolls
  • Handful of toasted pine nuts
  • Handful of olives
  • Handful of feta
  • Fresh basil leaves

Method

  1. Preheat the oven to 200°C/fan180°C/gas 6. Slice the red onion, the red pepper and the courgette into thin wedges. Put on a baking tray, drizzle with olive oil and balsamic vinegar, then bake for 30-40 minutes. Remove and set aside to cool.
  2. Mix the harissa paste with the yoghurt and spread onto 4 crusty rolls. Top with the veg, toasted pine nuts, sliced olives, feta and fresh basil leaves.
