Homemade peach iced tea

Peach iced tea is a classic of summer holidays in the Mediterranean, and here we’ve given it a serious upgrade with our homemade version! We think when you’ll try it you’ll agree that homemade iced tea is far better than the shop-bought stuff, especially if you use top-quality tea bags or, even better, loose leaf tea. Non-alcoholic drinks deserve the best too!

Ingredients

  • 75-100g golden caster or granulated sugar (depending on how sweet you like it)
  • 2 peaches, stoned and thinly sliced, plus extra to serve (optional)
  • 4 black teabags or 4 tsp loose leaf black tea

Method

  1. Put the sugar and peaches in a small pan with 300ml water and bring to the boil, mashing the fruit a little with a wooden spoon. Reduce to a simmer and cook for 5 minutes, then remove from the heat, cover and leave to steep for 30 minutes.
  2. In a large jug, brew the tea in 700ml just-boiled water for 4-5 minutes. Remove the teabags or strain the tea into a pitcher, then chill until needed.
  3. Once the sugar syrup is cool, strain it into the pitcher of tea to remove the peaches.

  5. To serve, fill a glass with ice and pour over the iced tea. If you like, add a few slices of fresh peach to garnish.

Quick wins & tips

Save the cooked, strained peaches to eat with yogurt and granola or to top ice cream.

You can use nectarines instead of peaches if that’s what you have, or even try any other stone fruit.
