Prawns in blankets

Ingredients
- 2 slices prosciutto or streaky bacon rashers
- 8 large raw prawns
- 1 tbsp olive oil
- Paprika to dust (optional

Method
- Slice the prosciutto (or bacon) into fine ribbons lengthways, then use them to tightly wrap up the prawns. Secure with a cocktail stick.
- Heat the oil in a frying pan over a medium heat. Add the prawns and cook for a minute each side (a little longer if using bacon) until the prosciutto is crisp and the prawns are pink and opaque. Remove the cocktail sticks, dip an end of each prawn in a little paprika (if using) and serve.
