Thai New Year is a three-day celebration, which this year takes place between 13-15 April, but why restrict this delightfully fresh and zingy food to three days? Bring a bit of Thai heat and sunshine to your table.
The green curry makes the most of seasonal vegetables, but you could add cooked prawns or cooked chicken to satisfy carnivores.
A typical Thai meal is made up of a number of dishes made for sharing. It usually begins with 2-3 starters, followed by a salad dish, then a couple of main dishes, followed by soup and rice, then fresh fruit for dessert. Here we’ve simplified things a bit (and provided a proper pudding!), but the whole meal is very flexible, so serve things as you see fit, or pick and choose from among the recipes. Each recipe serves four, but the whole feast should serve 6-8 if you’re making all the recipes. It’s a great sharing menu – or spread the work out by asking each diner to contribute a dish. Serve it all with lots of steamed Thai jasmine rice.
