Honeyed figs with crème fraîche and sesame brittle

Ingredients
- 1 tbsp clear honey, plus extra to serve
- 2 thyme sprigs, leaves picked
- 6 figs, halved
- 200g crème fraiche
For the sesame brittle
- 165g caster sugar
- 50g salted butter
- 30g sesame seeds, ideally a mixture of white and black, toasted

Method
- Make the sesame brittle first. Put the sugar and 1½ tbsp water in a heavy-based saucepan over a medium-high heat. Stir until the sugar has melted then remove the spoon and cook until it reaches a dark golden colour, swirling the pan regularly. Add the butter and stir to combine. Tip in the sesame seeds, stir to combine then carefully tip onto a baking tray lined with baking paper. Set aside to cool completely, then roughly chop to break into shards.
- Heat a large non-stick frying pan over a medium heat then drizzle in the honey and most of the thyme leaves. Add the figs cut-side down and cook for 4-5 minutes until caramelised.
- Spoon the crème fraiche into bowls, top with the honeyed figs and drizzle over any liquid left in the pan. Scatter over the shards of sesame brittle and the remaining thyme.
