Food producer, delicious.

Is there a more summery cocktail than this pineapple mojito? We think not. Muddle our pineapple, cucumber, mint and chilli-infused rum with mint and lime, then add soda water.

Method

  1. Squeeze the juice from the lime wedges into a tall glass with the sugar, then drop in the squeezed wedges and the mint leaves. Muddle well to get the sugar dissolving.
  2. Add the pineapple, mint and jalapeño rum (if you haven’t infused your own, used spiced rum with a dash of pineapple juice and muddle in 1-2 slices of chilli). Half-fill the glass with crushed ice, then stir well. Top up with a little more ice, garnish with a mint sprig and a wedge of pineapple (plus the leaves from the pineapple too, if you like).
