Air fryer Singapore noodles

Air fryer Singapore noodles

“You don’t need a wok to make these Singapore noodles – the air fryer does all the work for you and they’re a cinch to make,” says recipe writer Louise Kenney. “All that is required is some initial chopping, then you’re good to go. I’d recommend getting everything prepared before you start up your air fryer, as this will save you time.”

Air fryer Singapore noodles

  • Vegetarian Singapore noodles: The classic ingredients for this crowdpleasing dish include thin rice noodles and curry powder seasoning, often with chicken, pork or prawns. This version sticks with vegetables for a vegan-friendly dish.
  • Quick and easy: Ready in under 30 minutes, this recipe simply requires slicing some spring onions, cabbage, red pepper and carrot before seasoning and combining in the air fryer. The noodles, beansprouts and flavourings are added in the last few minutes of cooking. Easy!
  • Meal idea for two: The recipe serves two people – ideal for a Friday night fakeaway dinner. If you want to scale up the recipe, make sure your air fryer has enough capacity. As with all ingredients cooked in the air fryer, the vegetables need to have enough space between them for the air to circulate, so they fry (rather than steam).

Ingredients

  • 1 tbsp toasted sesame oil
  • 5cm piece ginger, finely chopped
  • 3 spring onions, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 large carrot, peeled and cut into matchsticks
  • ½ small savoy cabbage, thinly sliced
  • 200g ready-cooked vermicelli noodles
  • 200g beansprouts, washed
  • 3 tbsp light soy sauce
  • 1½ tbsp mild curry powder
  • 1 tsp shaoxing rice wine
  • ½ tbsp black sesame seeds
  • Coriander leaves to serve

Method

  1. Heat the air fryer to 190°C, removing the crisper plate.
  2. Pour half the sesame oil into the base of your air fryer basket, then add the ginger, spring onions, pepper, carrot and cabbage. Season with salt and pepper, give it a good mix, then air-fry for 10 minutes. (If you’re using an oven-style air fryer or one with a perforated basket, tip everything into a baking tin or dish that fits inside your air fryer.)
  3. Add the noodles, beansprouts, soy sauce, curry powder, rice wine, remaining sesame oil and the sesame seeds and give it all a good mix. Return to the air fryer for 3 more minutes.
  4. Remove and serve in warm noodle bowls with some coriander sprinkled over the top.
