Strawberry daiquiri

Fruity, light and seriously drinkable, a daiquiri is summertime’s best friend. This strawberry version makes the most of summer’s biggest berry.

Ingredients
- 6 strawberries
- 60ml white rum
- 15ml lime juice
- 15ml sugar syrup
Method
- Hull and roughly chop 5 of the strawberries, then put in the base of a cocktail shaker with the rum and muddle. Add the lime juice and syrup, top up with ice, then shake for 30 seconds. Strain into a chilled martini glass and garnish with the remaining strawberry.

Make this into a frozen daiquiri by whizzing the ingredients with crushed ice.
You can use all sorts of soft fruit in place of the strawberries – berries or stone fruit work best.
