Roast Parmesan and mustard new potatoes recipe

Serve these with roasted fish with bean and herb salad and and Black forest cherry dessert for a menu for four that will only cost you £5 a head.

Roast Parmesan and mustard new potatoes

Ingredients

  1. 1kg new potatoes, quartered
  2. 2 tbsp olive oil
  3. 1 tbsp Dijon mustard
  4. 50g grated fresh Parmesan or vegetarian alternative

Method

  1. 1. Preheat the oven to 180°C/fan160°C/gas 4. Place the potatoes on a large baking tray and toss with the olive oil. Place on the top shelf of the oven and roast for 20 minutes.
  2. 2. Toss with the mustard, then add the Parmesan, toss well, then roast for a further 5 minutes until golden. Best served with roasted fish with bean and herb salad.
