Serve these with roasted fish with bean and herb salad and and Black forest cherry dessert for a menu for four that will only cost you £5 a head.
Ingredients
- 1kg new potatoes, quartered
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 50g grated fresh Parmesan or vegetarian alternative
Method
- 1. Preheat the oven to 180°C/fan160°C/gas 4. Place the potatoes on a large baking tray and toss with the olive oil. Place on the top shelf of the oven and roast for 20 minutes.
- 2. Toss with the mustard, then add the Parmesan, toss well, then roast for a further 5 minutes until golden. Best served with roasted fish with bean and herb salad.
