What to do with leftover spring onions

  • Cheese and onion omelette. Mix finely chopped spring onions and a handful of grated cheddar. Whisk 2 eggs with a splash of milk and season well, then add the cheese and onion. Cook in a hot oiled frying pan, fold in half, then serve.
  • Quick flatbread pizza. Spread tomato passata over a flatbread, then top with finely chopped spring onions, sun-dried tomatoes, torn mozzarella and fresh basil leaves. Cook in the oven on a heated baking sheet at 200°C/180°C fan/gas 6 for 12 minutes or until the cheese is bubbling and the base is crisp.
  • Potato salad. Boil 500g new potatoes until tender. Drain well, then toss with 1 tbsp soured cream, a dash of olive oil and some chopped spring onions and gherkins. Season well.
