Ingredients

  • 3 large beef tomatoes, roughly chopped
  • 1 small onion, sliced
  • ½ cucumber, roughly chopped
  • 2 tbsp chopped fresh coriander
  • Juice of 1 large lemon
  • 2 tbsp olive oil

Method

  1.  Mix everything in a bowl, season, then cover and chill until needed. Serve with Chicken curry.
