Curry leaves

These scented Indian leaves are used a little like bay leaves in Western cooking, although curry leaves tend to be eaten rather than picked out at the end of cooking. Fresh leaves give off a lot more flavour than the dried ones but can be hard to find.

 

They have an aromatic flavour with almost citrusy notes, but are completely unrelated to curry powder.
