This is based on a homely Italian dish sometimes known as pizza rustica. The following version is meat-free but die-hard carnivores could add diced bacon or ham. This pie is as good cold as it is hot, so any leftovers are good news.

Make it a red that’s juicy and tangy, but not too heavy. We love a cherryish Italian Dolcetto with this.

Signed up to second Katie's comment: this is delicious. I made four individual pies using roughly a third of the ingredients, skipped the herbs as I was using basil and parmesan breadcrumbs, and they were gorgeous. Plus they made really nice leftovers for lunch the next day.
This is AMAZING! It is the best Pizza Pie I have ever eaten! You should definetly eat and make this!
