Bursting with vibrant flavours of coriander, lime and ginger, these Thai prawn cakes with sweet chilli dipping sauce make a great lunch or light dinner.

To thaw frozen prawns quickly, put them in a bowl of freshly boiled water for 5 minutes, drain, rinse and use immediately.
