Our low-fat French toast, otherwise known as “eggy bread”, can be topped with fresh berries and is a great way start to your day.

Ingredients
- 1 egg
- Few drops vanilla extract
- 2 slices wholemeal bread
- Spray oil
- 80g berries, fresh or frozen, thawed if frozen
Method
- In a shallow bowl, whisk the egg with the vanilla. Dip the bread slices into the mixture to coat each side.
- Spray a small pan with oil and fry the bread for 1–2 min on each side until golden. Serve topped with the berries.
