
Steamed cabbage and green beans with chipotle honey crunch

Looking for an easy but impressive side dish? Try tender steamed cabbage wedges and green beans, drizzled with a smoky hot honey and sprinkled with a crispy mixture of nuts and seeds…

- Quick side dish: This simple side requires just 5 minutes prep and 15 minutes cooking time. Try it with chicken, fish or crispy tofu.
- Fiery dressing: The dressing in this dish is inspired by Mexico’s salsa macha – a fiery mix of chillies, nuts, seeds and oil, it’s like a Mexican version of China’s crispy chilli oil.
- Steam power: Steaming cabbage in wedges like this shows the vegetable off at its best; the layers create a pleasing texture and catch the delicious dressing. If you’re not a chilli fan, dressing the vegetables with a herby salsa verde tastes amazing too.

Ingredients
- ½ large white cabbage, sliced into 6 wedges
- 200g green beans, trimmed
- ½ tsp chipotle paste
- 2 tbsp runny honey
- 2 tbsp blanched almonds, chopped
- 1 tbsp crispy shallots
- 2 tsp sesame seeds, ideally a mix of black and white

- Double steamer
Method
- Put the cabbage wedges in a steamer basket and steam for 10 minutes. Put the green beans in a second basket and, once the 10 minutes is up, add below the cabbage and steam both vegetables for a further 5 minutes.
- Meanwhile, stir the chipotle paste and honey together in a small bowl and the almonds, crispy shallots and sesame seeds with a pinch of salt in another. When the vegetables are cooked, transfer to a serving platter, then drizzle with the spicy honey and sprinkle with the nut mixture.
