Try our ideas to make the most of this very hardy – yet sweet – root vegetable. Swedes have a colourful two-tone skin, with a white tail and purple top, plus a yellow to orange flesh that deepens in colour when cooked. It’s particularly good in curries, pies and purées, plus of course, you’ll find it in neeps and tatties.
