The best thing about a dhal is its versatility. It makes a fantastic veggie main or side as part of a big Indian feast and can easily be adapted to use any vegetables you already have in the house. Enjoy with rice for dinner and then the next day with flatbreads.

Frittatas make a brilliant Tupperware-friendly meal. Enjoy hot, for dinner, with new potatoes and greens, then pop in a lunchbox with a crisp green salad to eat on the go.
