
Creamy sweetcorn and Tajín pasta

This budget recipe is the storecupbard saviour you didn’t know you needed but will always come back to. Tajín is a Mexican seasoning that combines lime and chilli, and when paired with sweetcorn it makes a wonderful sauce for pasta. Did we mention it’s also ready in 15 minutes and needs just 5 ingredients?

Ingredients
- 150g dried fusilli (or similar)
- 325g can sweetcorn, drained
- 1 shallot, roughly chopped
- 2 tbsp whole milk or dairy-free alternative
- 1 tsp Tajín seasoning, plus extra to serve
- Specialist kit
- Blender
Method
- Cook the pasta in a large pan of salted water for 2 minutes less than the pack instructions or until al dente.
- Meanwhile, put half of the sweetcorn in a blender with the shallot, milk, Tajín and a pinch of salt. Whizz until smooth.
- Drain the pasta, reserving a mugful of the cooking water. Tip the pasta back into the pan and put over a medium heat. Add the blended corn mixture plus the rest of the corn and a glug of the cooking water. Stir together quickly to combine and coat the pasta, adding more of the water if needed. Serve with a sprinkling of extra Tajín on top.
