Cheese and mustard straws

Use a batch of our easy flaky pastry to make these delicious cheese straws. Mustard and two types of cheese pack a big flavour punch.

- Serves 6-8
- Hands-on time 15 min. Oven time 18 min
Ingredients
- 1 batch (around 400g) ultimate flaky pastry
- 50g cheddar cheese, coarsely grated
- 50g parmesan, finely grated
- 2 tbsp wholegrain mustard
Method
- Heat the oven to 200°C fan/gas 7 and line a large baking sheet with baking paper. Roll the pastry out to a large rectangle that’s around 5mm thick. Spread it with the mustard, then sprinkle with the cheeses. Season with salt and pepper.
- Cut the pastry into long 2cm strips. Lift up one end of a strip and twist until there are about 3 full twists round. Repeat with the remaining pastry strips, then transfer them to the tray.
- Bake for 16-18 minutes until golden and crisp. Leave to cool for 5 minutes before enjoying warm or leave to cool completely.

Easy swaps: Use any hard cheese you like in place of cheddar and parmesan. You can also play around with what’s spread on the pastry first – quince paste and chutneys work well.
