As this cruel weather continues to haunt us, we are turning back to comfort with chicken florentine. We've switched the spinach for cavolo nero because we love its iron-rich flavour, but savoy cabbage or spring greens also work well. Serve with whatever you like – we like it with brown rice or gnocchi.⁠

This saucy romesco chicken is always there for you. It's a weeknight chicken dinner we turn to again and again because it's ease to flavour ratio is JUST right. Warm romesco sauce, full of tang and sweet nutty depth coats pan-fried chicken breasts on a bed of potatoes and greens. ⁠

Tip: nuts for romesco are better toasted in your oven than a pan, but it’s not worth turning your oven on for just that. Roast them in batches when you’re cooking something else in the oven, then keep in an airtight container, ready to use. You can also toast nuts well in an air fryer.⁠

He says: "Of all the recipes I've come up with over the years – some good, some best kept from the public domain – this is my crowning glory. Puttanesca is generally a fresh, sunshine-suitable dish whipped together in the time it takes to cook the pasta, but when the weather’s a bit damp and dreary (like this week) something more robust is needed.

By slow-cooking the sauce like a ragù (and adding a generous glug of red wine), you get something deep, meaty, robust and full of all that deliciously salty umami flavour that only the trio of olives, capers and anchovies can provide. I seriously urge you to give it a go – it’s my desert island dish."⁠
