In season from October to March, brussels sprouts can be used in lots of different ways – and are a star of the Christmas dinner table. Try one of our best brussels sprouts recipes, including a cheesy gratin and a Middle Eastern salad, and be sure that sprouts will never be boring again.

For Christmas, sprouts with bacon and chestnuts is a classic – and our best-ever fondant version is the one to try this year. By cooking them a little like potato fondants (frying them until crisp, then braising in liquid to cook them through), you get a crispy caramelised sprout on the cut side with a soft, fresh, green round on top. For an alternative, try our crispy ‘nduja sprouts in the air fryer or a cheesy twist on sprouts, inspired by cauliflower cheese.
