Roasted pepper, lime and coriander butter

This pepper, lime and coriander butter recipe is delicious with meat, seafood and veg.
- 125g soft butter
- 2 roasted peppers from a jar, chopped
- grated zest of 1 lime
- 1 red chilli, deseeded and chopped
- some fresh coriander, chopped.
- Mix all of the ingredients in a large bowl to combine.
- Wrap in foil, shape into a log and chill until firm.
