Blue cheese is a great cooking ingredient that should be complimented rather than overwhelmed. It works as a wonderful, salty flavour enhancer, bringing a real whack of flavour with just a small amount. We love it with contrasting sweet caramelised onions, figs, pears and butternut squash.
